Easy & Delicious Pumpkin Bread
Servings: 2 loaves

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 3/4 cups Skinny Coconut Oil
- 2 cups sugar
- 2 large eggs
- 1 15-oz can pure pumpkin puree (NOT pumpkin pie filling)
- OPTIONAL - Pumpkin seeds for decoration
(TIP: Spices in recipe can be replaced with equal amounts of pumpkin pie spice.)INSTRUCTIONS
- Preheat oven to 325°F with oven rack in the middle position. Generously grease two 8 x 4-inch loaf pans with butter and dust with flour (or a baking spray with flour in it).
- In a medium bowl, combine the flour, salt, baking soda, baking powder, cloves, cinnamon, and nutmeg. Whisk until well combined; set aside.
- In a large bowl, use mixer to beat the butter and sugar on medium speed until just blended. (This will be a crumbly texture.) Add the eggs one at a time, beating well after each addition. Continue beating until very light and fluffy, a few minutes. Beat in the pumpkin. (The mixture will have a grainy, lumpy appearance.)
- Add the flour mixture slowly, mixing on low speed until combined.
- Pour the batter into the prepared pans, dividing evenly. (OPTIONAL - Smooth the top and spread pumpkin seeds on top.) Bake for 65 – 75 minutes, or until a cake tester inserted into the center comes out clean. Allow loaves cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
(TIP - After cooling, bread can be covered and frozen for up to 3 months. Simply thaw overnight in the refrigerator before serving.)
Soft & Chewy Fall Cookies

- 2 1/2 cups all-purpose flour
- 2 tsp cornstarch
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/8 tsp ground cloves
- 1/4 cup unsalted butter, room temperature
- 1/2 cup Skinny Coconut Oil
- 3/4 cup packed brown sugar
- 1/2 + 1/4 cup granulated sugar
- 1 large egg
- 2 tsp vanilla
- 1/2 cup canned pumpkin (not pumpkin pie filling)
- 1 1/2 tsp cinnamon
- Whisk together the flour, cornstarch, cream of tartar, baking soda, salt, cinnamon, nutmeg & ground cloves.
- In a separate large bowl beat together the butter, coconut oil, and sugars until fluffy. Turn the mixer down to low and beat in the egg, vanilla, and pumpkin.
- Slowly add in the flour mixture. The dough will be very sticky.
- Cover the bowl and refrigerate for at least 2 hours or up to 2 days.
- When ready to bake, take the dough out of the fridge.
- Preheat the oven to 350F degrees and line 2 cookie trays with parchment paper or silicone baking mats.
- In a small bowl whisk together the cinnamon and the remaining 1/4 cup sugar for cinnamon sugar coating.
- Form the dough into balls of about 1 1/2 tablespoons in size, then roll in the cinnamon sugar coating and flatten slightly
- Place the cookies on the cookie sheets about 2 inches apart.
- Bake for about 8-10 minutes until the tops are set.
Quick & Easy Apple Crisp
Servings: 8 servings

- 4 granny smith apples, cored and sliced (unpeeled)
- 1 tsp. ground cinnamon
- Juice of 1/2 lemon
- 2 tbsp. water
- 1/4 c. plus 2 tbsp. granulated sugar, divided
- 3/4 c. all-purpose flour
- 1/4 c. lightly packed brown sugar
- 1/2 tsp. kosher salt
- 1/4 cup butter, cold, cut into cubes
- 1/4 cup Skinny Coconut Oil
- 1 c. old fashioned oats
- OPTIONAL - Vanilla ice cream, gelato, or whipped cream for topping
- Preheat oven to 375°. In a large ovenproof skillet, deep dish baking pan or 9” cake pan, toss apples with 2 tablespoons sugar, lemon juice, water, and cinnamon. Place skillet on a large rimmed baking dish.
- In a large bowl, whisk together flour, brown sugar, remaining 1/4 cup sugar, and salt. Mix butter and coconut oil into flour mixture with your hands until it resembles coarse crumbs. Add oats and continue to mix with your hands until big, moist clumps form.
- Scatter oat mixture on top of apples and bake until apples are bubbling and topping is golden, about 45 minutes. Let cool 10 minutes before serving. (OPTIONAL - Top with ice cream, gelato, or whipped cream.
