Is coconut oil alkaline or acidic?

The coconut fruit itself is alkaline naturally. However, when heat is used during the extraction or manufacturing process, the coconut oil becomes acidic. This process can be compared to roasting coffee. The coffee bean itself is alkaline, but when roasted, becomes acidic.
